History of Tasty Eclair

First of all, what does the word “Éclair” mean? You will be surprised, as it means “flash of lightning” as a metaphor for how quickly this delicious dessert disappears if left unattended!

Now, who invented this tempting treat? It is said to have been first invented by the French Chef Antonin Carême, a man with a tragic history that led to great innovation in the early 19th century. Antonin was abandoned by his parents in the turbulent days of the French Revolution which forced him to work as a kitchen boy and then as an apprentice to a famous pâtissier named Sylvain Bailly.
