2 cups basmati rice, soaked
1 to 1 ½ pounds chicken breast, cubed
1 tablespoon garlic, grated
1 tablespoon ginger, grated

1 teaspoon garam masala
1 teaspoon coriander
½ teaspoon turmeric
¼ teaspoon ground cinnamon
¼ teaspoon cardamom
¼ teaspoon ground black pepper
2 teaspoons salt, divided
½ cup plain yogurt
¾ cup water, divided
¼ teaspoon saffron
4 tablespoons oil, divided
2 large yellow onions, finely sliced (about 6 cups)
3 cinnamon sticks
3 bay leaves
3 cups boiling water

  1. Prepare Rice and Marinate Chicken
