Dough

2 cups (350 g) semolina flour
¼ cup (50 g) baker’s sugar or superfine sugar
¼ tsp. active dry yeast
¼ cup plus 1 Tbsp. (50 g) all-purpose flour, plus more for surface
½ cup (1 stick) plus 2 Tbsp. unsalted butter, room temperature
3 Tbsp. orange blossom water
3 Tbsp. rose water

½ tsp. ground cinnamon
2 Tbsp. unsalted butter, melted

  1. Dough Preparation

    In a large bowl, mix semolina flour, sugar, yeast, and ¼ cup plus 1 Tbsp. all-purpose flour. Incorporate butter with fingertips, add orange blossom and rose water, then knead the dough in the bowl until smooth. Roll into a ball, place seam side down on a floured surface, cover with a damp cloth, and let it rest for 1½ hours in a cool place.
  2. Date Paste Filling

    Combine date paste and cinnamon, gradually adding butter until a smooth paste forms. Shape small pieces into 1½" disks, about ¼" thick. Repeat the process, creating 40 disks, and cover with plastic wrap.
  3. Assembling Date Cookies

    Preheat the oven to 400°. Roll dough into walnut-sized balls, flatten into 3" disks, and place a date disk in the center. Fold the edges over the date, pinching to seal. Press into a cookie mold, tap out onto a baking sheet, and repeat.

    Bake the cookies until lightly golden, approximately 15–18 minutes. Transfer to a wire rack and let them cool.
