Ramadan Recipes: Egg Curry

Egg curry is a curry made of hard-boiled eggs, tomatoes, spices, and herbs. The curry is part of Indian cuisine and is ideal for iftar because it contains a lot of protein, which makes it an enriching and nourishing dish after a day without eating. Egg curry can be had with naan bread, chapati, or plain rice, which makes a fulfilling meal.

Main Ingredients for Curry

5 boiled eggs
2 tbsp oil
1 tsp ghee
1 1/4 cups onions, diced
1 cup tomatoes, diced or pureed
1 green chilli, finely chopped
1 tsp ginger-garlic paste
1/2 tsp salt
1 1/4 cup water
1 tbsp, fresh coriander leaves, finely chopped
1/4 tsp dried fenugreek leaves
1 tsp sugar
4 tbsp cream

Spices

1 bay leaf
1 cinnamon stick
2 green cardamoms
1 tsp red chilli powder
1 tsp garam masala
1 tsp coriander powder
1/8 tsp turmeric powder

  1. Fry Boiled Eggs

    Heat 1 tsp ghee or oil in a pan and fry boiled eggs in it, until they turn golden. Remove from pan and set aside.
  2. Make Curry

    Heat 2 tbsp of oil in a pot and add bay leaf, cardamoms, and the cinnamon stick. When the oil sizzles, add onions and green chilli and saute them until onions turn golden. Add the ginger and garlic paste and saute until the raw smell disappears. Add tomatoes to the pot and saute until the puree boils. Add the red chilli powder, garam masala, turmeric powder, coriander powder, sugar, and salt to the puree and mix well. Saute the puree until a nice aroma effuses from it. Add water to the puree and mix well. Cook until the puree thickens and oil appears on its surface.
  3. Add Eggs to the Puree

    Add cream to the puree and mix until it is nicely blended and the curry thickens. Add fried eggs and dried fenugreek leaves to the curry. Mix properly with the curry, then simmer for some time. Remove the pot from the heat.
  4. Garnish and Serve

    Sprinkle coriander leaves on top of the curry and serve with naan bread or plain rice.
