2 cups whole milk
1/2 cup granulated sugar
1/4 cup cornstarch
1/4 teaspoon salt
3 large egg yolks
1 cup heavy cream
1 teaspoon vanilla extract
1/2 cup shelled pistachios, finely chopped
Green food coloring (optional)
Whipped cream and additional pistachios for garnish

  2. Combine Milk and Egg Yolks

    In a separate bowl, whisk the egg yolks with the milk until smooth. Slowly pour the milk mixture into the saucepan with the dry ingredients, whisking constantly to prevent lumps.
  3. Cook Mixture

    Place the saucepan over medium heat and cook the mixture, stirring continuously, until it thickens and comes to a gentle boil. This should take about 5-7 minutes. Once it starts bubbling, continue to cook for an additional 1-2 minutes until thickened further.
  4. Add Pistachios and Flavorings

    Remove the saucepan from heat and stir in the chopped pistachios and vanilla extract. If desired, add a few drops of green food coloring to enhance the pistachio color. Mix until well combined.
  5. Cool Pudding

    Transfer the pudding to a heatproof bowl and cover the surface directly with plastic wrap to prevent a skin from forming. Allow the pudding to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours until completely chilled and set.
