Dubai, UAE, September 2025, Big Mamma is a squadra of Italians and enthusiasts from all over the world, united by the same ambition: to share the most authentic Italy, celebrating its cuisine, its artisans and its joy of life. Ten years since the beginning of this adventure with milestones such as becoming B-Corp in 2018 and opening 30 trattorias across Europe (Pink Mamma and La Felicità in Paris, Circolo Popolare and Jacuzzi in London, Bel Mondo in Madrid, Edmondo in Hamburg and Gloria in Milan) the dream of opening in the Middle East is finally becoming reality.
And where better than Dubai? A city of dazzling energy, design, and dreams. This December, Gloria will open its golden doors at the Ritz Carlton DIFC situated at the heart of this vibrant metropolis.
Italy has always been at the centre of our story, where our crew was brought together, and where we built lasting bonds with artisanal producers who allow us to cook every day with products made with care and love. Each dish is a celebration of Italian excellence, built on a simple belief: great food begins with great produce. 24-month Parmigiano Reggiano crafted by the maestri at Famiglia Gennari, fresh mozzarella coming from Caseificio Artigiana, hand-rolled pasta made in-house every morning, extra virgin olive oils pressed in small mills across Italy, etc.
Born in Milan’s Brera district, Gloria will transport guests straight to the bold and glamour 1970s Milano - velvet banquettes, monumental chandeliers, golden mirrors and vintage flourishes, while a sweeping terrace opens onto the city’s skyline. The menu is an ode to the dolce vita, bold flavors with fine dressings thought as an homage to authentic Italian recipes, mindfully reimagined by our passionate chef, Pietro Zamuner. From the Casoncelli all’astice, incredible lobster stuffed pasta covered in beurre blanc sauce and caviar, the lamb and Wagyu Saltimbocca filled with scarmoza and sage, to the indulgent pasta Cacio e Pepe and its four-pepper blend or even the iconic pasta Mafaldine al tartufo smothered in fresh Melanosporum truffle shavings.
Opening in Dubai marks one of the most significant stages of our journey: bringing the Big Mamma experience to the Middle East for the very first time. Our mission is simple, to share our most authentic Italy, with its warmth, its generosity, in a spectacular setting worthy of this extraordinary city.
