Fattoush Salad is a vibrant and refreshing dish, perfect for Ramadan iftar tables. This traditional Middle Eastern salad combines crispy toasted pita, fresh vegetables, and a tangy sumac-infused dressing. Light yet flavorful, it’s a delicious way to start a meal, offering a balance of crunch, zest, and nourishment after a day of fasting.

  • Ingredients of Fattoush Salad

Toasted Pita

2 pita breads, cut into bite size square pieces
Extra-virgin olive oil, for drizzling
Sea salt for sprinkling

Salad

1 small head romaine lettuce, chopped
2 cucumbers, thinly sliced
1 cup cherry tomatoes, halved
4 red radishes, thinly sliced
⅓ cup thinly sliced red onion
½ cup fresh mint leaves
⅓ cup chopped fresh parsley

Dressing

¼ cup extra-virgin olive oil
2 tbsp fresh lemon juice
2 tsp pomegranate molasses
1 tsp honey
1 tsp ground sumac, plus more to garnish
1 clove of garlic, grated
½ tsp sea salt
  • Method & Directions of Fattoush Salad

  1. Heat Up the Oven

    Preheat the oven to 220°C and line a baking sheet with parchment paper.
  2. Prepare the Pita Bread

    Cut the pita into bite-sized pieces and place them on the baking sheet. Drizzle with olive oil, sprinkle with salt, and toss to coat. Spread the pieces evenly on the sheet. Bake for 13 to 20 minutes, or until crisp, tossing halfway through for even baking.
  3. Make the Dressing

    In a medium bowl, whisk together olive oil, lemon juice, pomegranate molasses, honey, sumac, minced garlic, and salt until well combined.
  4. Assemble the Salad

    In a large bowl, combine chopped romaine lettuce, sliced cucumbers, diced tomatoes, sliced radishes, thinly sliced onion, and half of the fresh mint and parsley. Pour in half the dressing and toss to mix everything well.
  5. Top with Toasted Pita Bread

    Taste and adjust seasoning, adding more dressing if needed. Top with the toasted pita, remaining mint, and parsley. Sprinkle with sumac for extra flavor.
  6. Serve and Enjoy
