Ramadan Recipes: Chapli Kebabs

Chapli Kebabs are fried minced meat patties, which are popular in Pakistan. These kebabs are crisp and delectable, which makes them perfect to have for iftar with raita (yoghurt side dish) or chutney (green herb sauce) and naan bread.

Chapli Kebabs Ingredients

3 tbsp coriander powder
1 tbsp cumin powder
2 tbsp dried pomegranate seeds
3 tbsp cornflour
454 g ground beef
1-2 medium red onions, diced
2 green onions, finely chopped
2-4 small green chillis, finely chopped
4 garlic cloves, grated
3/4 inch ginger, grated
1/4 cup cilantro leaves, finely chopped
1 tsp red chilli flakes
1/4 tsp black pepper powder
1 1/2 tsp salt
1 egg, whisked
1 small tomato

  1. Mix Pomegranate Seeds with Spices and Toast Cornflour

    In a spice grinder, add coriander powder, cumin powder, and pomegranate seeds and blend the mixture until the seeds are properly crushed. In a skillet, toast corn flour until its colour deepens. Remove it from the skillet and set aside to cool.
  2. Mix Beef with Other Ingredients to Marinate

    In a large bowl, mix beef with the spices and pomegranate seeds mixture. Also, add toasted corn flour, red onion, green onion, green chilli pepper, cilantro, garlic, ginger, red chilli flakes, red chilli powder, black pepper, salt, egg, and tomato. Knead the beef with gloved hands so that the spices and other ingredients are nicely blended with the beef. Cover the bowl and set aside for an hour or more.
  3. Make Patties of the Beef Dough and Fry

    After the beef is marinated, make patties of the beef dough. In a skillet, add oil and fry these patties until they are crisp and brown on both sides.
  4. Garnish and Serve

    Place patties on a serving platter and sprinkle cilantro leaves on top of them. Serve with raita and lemon on the side.
