Ramadan Recipes: Es-Teler

Es-Teler is a refreshing Indonesian fruit cocktail that uses pandan as a base flavor for the coconut milk. Pandan has a grassy vanilla-like flavor similar to coconut.

2 avocados
2 litres of coconut water
1/2 cup condensed milk
400g sugar
10 pandan leaves
100g nata de coco (coconut gel)
300g jackfruit - cubed (or diced mango)
4 cups crushed ice
2 fresh coconuts

  1. Make sweet coconut water

    In a bowl, combine 1 litre of coconut water and condensed milk.
  2. Make pandan syrup

    In a pot, boil the other 1 litre of coconut water with sugar and pandan leaves until thickened. Once done, remove the pandan leaves, and set aside.
  3. Prepare the cocktail

    In a serving bowl, scoop avocado flesh out and dice, add diced jackfruit and coconut flesh. Then, add in sweet coconut water before adding the desired amount of crushed ice.
  4. Serve

    Drizzle the pandan syrup over crushed ice and serve cold.
