Chicken Siopao Asado Dough

3 cup of white flour
⅓ cup of brown sugar
½ tablespoon of baking powder
1.5 tablespoon of sugar
2 teaspoon of yeast
1 cup of water
¼ cup of water (For mixing with the yeast and sugar)
3 tablespoons of vegetable oil

Chicken Siopao Asado Fillings

500 gram of chicken breast
½ cup of chopped red onions
2 cloves of garlic
1 tablespoon of cornstarch
¾ cup of water (¼ cup of water to mix with cornstarch)
2 tablespoons of brown sugar
2 tablespoons of soy sauce
2 tablespoons of oyster sauce
Salt for taste

  1. Making Siopao Dough

    Mix 2 teaspoons of yeast, ⅓ cup of water, and 1 tablespoon of brown sugar in a small cup, then set it aside. In a large bowl, combine the white flour, baking powder, the water-yeast mixture, and the remaining dough ingredients. Stir with a wooden spoon, then knead the mixture by hand. Incorporate vegetable oil into the dough as you knead until it becomes soft and fluffy. Adjust the consistency by adding more flour if the dough is too sticky or more water if it's too rubbery. Cover the dough with a towel and let it rest for 1 ½ hours to allow it to rise in size.
  2. Making the Asado Filling

    Heat vegetable oil in a pan until hot. Add chopped red onion and garlic, stirring for a few minutes until they appear transparent. Next, add chopped chicken breast, stirring until cooked through and the juices are absorbed. Pour in the soy sauce, oyster sauce, brown sugar, and ½ cup of water, stirring to combine, then let it simmer for 5 to 10 minutes until the chicken breast is tender. In a small cup, mix ¼ cup of water with cornstarch before adding it to the chicken mixture to thicken the sauce. Stir until the sauce reaches desired thickness. Turn off the heat, then shred the braised chicken into smaller pieces using a fork. Set aside to prepare for assembling the bun.
  3. Assembling the Siopao Bun

    On a clean surface, use your hands to roll the siopao dough into a cylindrical shape, then divide it into 8 pieces using a knife. Form each piece into a smaller ball. Flatten each ball with a rolling pin into a round shape. Place two and a half tablespoons of Asado filling in the center of each dough round. Wrap the filling by holding the edges of the dough and sealing it by twisting above to form a ball shape. Place the siopao bun on parchment paper and repeat with the remaining dough and filling.
  4. Steaming the Siopao

    In a large pot, add ½ cup of water. Place the buns in a steamer, ensuring they are spaced about an inch apart, and then transfer the steamer into the pot. Cover the pot with a lid and steam for 15 minutes. You'll observe the buns expanding in size. Remove the buns from the steamer and transfer them to a plate. Repeat the process with the remaining buns. Serve with ketchup or your preferred sauce.
