Ramadan Recipes: Indonesian Fried Rice

Indonesian fried rice, known as Nasi Goreng, is mainly rice with just a little bit of meat or chicken and just onion for the vegetables, and is traditionally served with a fried egg.

Kecap manis, a sweet soy sauce, and terasi, an Indonesian shrimp paste, are what sets Nasi Goreng apart from other fried rice variations in other countries.

Chicken

150g chicken breast - thinly sliced
1 tbsp oil
1 tbsp kecap manis (sweet soy sauce)

Rice

3 cups cooked white rice - cold
1.5 tbsp oil
2 garlic cloves - finely chopped
1 tsp red chilli - finely chopped
1 small onion - diced
2 tbsp kecap manis (sweet soy sauce)
2 tsp shrimp paste
4 eggs to serve

  1. Cook the chicken

    In a large skillet, heat oil over high heat, add chilli, garlic, and onion, then stir for 1 minute. Add chicken, and cook until it mostly turns white, then add kecap manis and cook until chicken is a bit caramelized.
  2. Add rice

    Add rice, 2 tbsp kecap manis and shrimp paste, and stir constantly for 2 minutes until sauce reduces down and rice grains start to caramelize.
  3. Serve

    Add fried eggs on top and serve!
