Jollof spaghetti is a delicious and flavorful Nigerian dish that combines the rich, spicy flavors of tomato-based Jollof sauce with the familiar texture of spaghetti.

Jollof Spaghetti

2 red bell peppers
1 Bonney pepper
3 large tomatoes
2 large onions - chopped
¼ cup vegetable oil
2 cloves garlic - minced
1 teaspoon fresh ginger
2 tablespoons tomato paste
1 teaspoon paprika
1 teaspoon thyme
1 teaspoon curry powder
1 teaspoon chicken bouillon powder
salt and black pepper to taste
2 bay leaves
12 oz spaghetti pasta (roughly 3 and a half cups of long-cut pasta)
4 to 4½ cups chicken, beef, or vegetable broth
cooked protein of choice (optional)

  1. Blend the sauce ingredients

    Blend the bell pepper, Bonney pepper, tomatoes, and onion until smooth.
  2. Prepare the tomato-based sauce

    In a large pot, heat the vegetable oil over medium heat. Add the onion and cook until translucent, then add the garlic and ginger and cook until fragrant. Add the tomato paste and cook for about a minute.
  3. Add the blended sauce

    Add the blended sauce to the pot and stir in paprika, thyme, curry powder, salt, pepper, and bay leaves, then reduce the heat to medium-low and simmer for about 10 minutes.
  4. Add the liquid

    Pour in the broth, and stir to create a smooth sauce. Bring the mixture to a boil on high heat.
  5. Add the pasta

    Add the pasta, cover, and cook for 10-12 minutes until the pasta is al dente, and stir occasionally to prevent sticking.
  6. Serve
