Harira is the national soup of Morocco. It consists of tomatoes, lentils, chickpeas, fresh herbs, and warm spices like cumin, turmeric, and cinnamon. It is often thickened with vermicelli pasta or rice and is a popular dish during Ramadan when it's served to break the fast. The soup's name, "Harira," comes from the Arabic word "harir," which means silk and refers to its smooth texture. You should definitely try it!

Moroccan Harira Soup
2 tablespoons extra-virgin olive oil, plus more for garnish
12 ounces boneless lamb shoulder, cut into 1/2 -inch pieces (Optional)
1 large yellow onion, diced
1 teaspoon kosher salt, divided, or to taste
1 ½ teaspoons smoked paprika
1 teaspoon ground coriander
1 teaspoon ground cumin
½ teaspoon ground ginger
½ teaspoon freshly ground black pepper
¼ teaspoon ground cinnamon
4 cloves garlic, minced
1 tablespoon tomato paste
4 cups chicken broth
1 (15 ounce) can crushed tomatoes
2 ribs celery with leaves, chopped
2 cups water, or to taste
1 (15 ounce) can chickpeas, drained
¾ cup green lentils, rinsed
1 tablespoon all-purpose flour
2 tablespoons cold water
½ cup chopped fresh cilantro, divided
½ cup chopped fresh parsley, divided
½ cup vermicelli, broken into 1/2-inch pieces
⅛ teaspoon cayenne pepper
1 lemon, juiced

    In a stock pot, heat olive oil over medium-high heat. Add cubed lamb to the pot and cook for approximately 5 minutes until it is browned and some of the fat has been released.
  2. Grab a stock pot

    In a stock pot, brown cubed lamb in olive oil over medium-high heat for 5 minutes. Add diced onion and a pinch of salt, cooking until soft and lightly browned for 4-5 minutes. Season with smoked paprika, coriander, cumin, ground ginger, black pepper, and cinnamon before adding minced garlic, cooking for another 30 seconds to 1 minute.

    After seasoning the lamb mixture with various spices and cooking garlic, add tomato paste to the pot and stir for approximately one minute. Next, add chicken broth, crushed tomatoes, and celery to the mixture and stir until well combined. Finally, add water to the pot and bring the mixture to a boil over high heat.
  4. Lower the heat

    After bringing the mixture to a boil, add chickpeas and green lentils to the pot and season with salt to your desired taste. Lower the heat to medium-low and let the soup simmer for 30 minutes, stirring occasionally.
  5. Thicken the Soup

    To thicken the soup, mix flour and water in a bowl and add it to the simmering soup. Stir in half of the cilantro and parsley, and let it simmer for 20 minutes until the meat and lentils are tender and the soup has thickened.
  6. Add vermicelli to the soup and taste

    Add vermicelli to the soup and cook for 10 to 15 minutes until it becomes tender. Taste the soup and adjust the seasoning by adding cayenne and salt as required. Finally, add the remaining cilantro and parsley, and add lemon juice to taste before finishing the soup.
  7. Serve

    To serve, add a drizzle of olive oil on top of the soup and serve immediately.
