Zucchini Tomato Quiche

1 refrigerated pie crust (or homemade crust)
1 large zucchini, thinly sliced
1 cup cherry tomatoes, halved
1/2 cup red onion, thinly sliced
1 cup shredded mozzarella cheese
4 large eggs
1/2 cup milk
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper to taste
Fresh basil leaves for garnish

    Preheat your oven to 375°F (190°C). Prepare a pie dish by lightly greasing it with cooking spray.
  2. Prepare the Crust

    Roll out the refrigerated pie crust and carefully place it into the pie dish, pressing it gently against the bottom and sides. Trim any excess crust hanging over the edges.
  3. Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add sliced zucchini, cherry tomatoes, and red onion to the skillet. Sauté for 5-7 minutes until the vegetables are slightly softened. Stir in minced garlic and cook for an additional minute. Season with salt and pepper to taste.
  4. Layer the Quiche

    Spread the sautéed vegetables evenly over the prepared pie crust. Sprinkle shredded mozzarella cheese on top of the vegetables.
  5. Prepare the Egg Mixture

    In a mixing bowl, whisk together eggs and milk until well combined. Season with salt and pepper. Pour the egg mixture over the vegetables and cheese in the pie dish.
  6. Bake the Quiche
