Broccoli Soup

5 tbsp butter, divided
1 onion, chopped
1 stalk celery, chopped
3 cups chicken broth
8 cups broccoli florets
3 tablespoons all-purpose flour
2 cups milk
Ground black pepper to taste

  1. Sauté the Vegetables

    Melt 2 tablespoons of butter in a medium stockpot over medium heat. Add chopped onion and celery and sauté until they become tender and fragrant.
  2. Cook the Broccoli

    Add broccoli and broth to the pot, cover, and let it simmer for 10 minutes until the broccoli is soft and cooked through.
  3. Blend the Soup

    Carefully pour the soup into a blender, filling it no more than halfway. Hold the lid down with a folded kitchen towel and blend in batches until the soup is smooth. Transfer the pureed soup back into a clean pot.
  4. Make the Béchamel

    In a small saucepan, melt 3 tablespoons of butter over medium heat. Stir in flour, then gradually add milk, stirring constantly until the mixture is thick and bubbly.
  5. Combine and Serve
