Ramadan Recipes: Fattoush Salad

Fattoush is a simple chopped salad made from toasted or fried pieces of flat bread combined with mixed greens and other vegetables varying by season and taste, then dressed in a zesty lime vinaigrette. It is popular in the Levant.

Fattoush Salad

2 loaves pita bread
3 tablespoons olive oil
1 tsp sumac
salt and pepper to season the bread
1 heart romaine lettuce, chopped
1 large cucumber, chopped
5 tomatoes, chopped
5 green onions, chopped
5 radishes, thinly sliced
2 cups chopped fresh parsley leaves
⅓ cup chopped fresh mint leaves

Dressing

Juice of 1 lemon
1 clove garlic, crushed
⅓ cup olive oil
1 tablespoon pomegranate molasses
2 tablespoons honey
1 tsp sumac
¼ tsp ground cinnamon
¼ tsp ground allspice
Salt and pepper to taste

  1. Fry the pita bread

    Slice the pita bread into small bite-size pieces, add them over eat heated olive oil, and toss them until browned. Transfer the bread to a plate and season with salt, pepper, and sumac.
  2. Combine the veggies

    combine the chopped lettuce, cucumber, tomatoes, green onions, sliced radish, parsley, and mint in a large mixing bowl.
  3. Prepare the dressing

    Whisk together all of the dressing ingredients in a small bowl until smooth.
  4. Pour the dressing on top and serve

    Pour the dressing on top of the veggies and add the pita chips and toss lightly, then serve in small serving bowls or plates.
