Diwali Recipes: Kale Salad

Kale salad is the ideal healthy side dish as it is loaded with fresh vegetables and has a homemade lemon dressing which is really easy to make.

  • Ingredients

5-6 cups Chopped Kale
1/2 tsp salt
1/4 cup cheddar cheese
1 onion diced
2 tsp olive oil
1/4 cup sunflower seeds
1/4 cup Jalapeno
1 cups broccoli
1/2 cup cranberries
1 carrot shredded

Lemon Dressing

3 tbsp cup olive oil
1 garlic finely chopped
1/2 squeezed fresh lemon juice
1 tsp oregano
1 tsp honey
1 tbsp Dijon mustard
1 1/2 tbsp vinegar
1/2 tsp salt
1 tsp ground black pepper

    Make the dressing by putting all the ingredients in a covered jar and mix vigorously. To taste, adjust the sugar, salt, and pepper after dipping a kale leaf in the dressing.
  2. Mix the ingredients

    Mix massaged kale, broccoli, Jalapeno, cheese, carrots, onion, sunflower seeds, and cranberries in a big bowl. Reshake your dressing, then drizzle approximately a third of it over the salad.
