Ramadan Recipes: Shami Kabab

Shami kababs are fried patties made of beef with yellow split peas. They are popular in the Asian subcontinent and the recipe originates from Lucknow in India during the Mughal reign.

Ingredients for Spice Mix

6-8 red chillis, round
5 cloves
2-inch cinnamon stick, broken
1 black cardamom
1/2 teaspoon black pepper
1 bay leaf
1 tablespoon coriander seeds
1 teaspoon cumin
1 teaspoon black cumin
1/2 teaspoon fenugreek seeds, optional
1 teaspoon salt

Ingredients for Cooking Meat

500 g boneless beef
250 g or 1/4 cup yellow split peas
1 potato
4 tbsp shami kabab spice mix
2 tbsp oil
1/2 cup mint leaves
3 green chillies
2-inch ginger
4 big garlic cloves
1/2 tsp turmeric
1 cup water

Ingredients for Making Kebabs

3 tbsp freshly chopped coriander
1 tsp chaat masala
1 cup chopped onion
1 egg, beaten
2 hard-boiled eggs, chopped

Ingredients for Frying Kababs

3 eggs to make eggwash
1/4 tsp salt
1/4 tsp red chilli powder
breadcrumbs
oil, for frying
  • Method & Directions

  1. To make spice mix

    Mix all spices in a pan and roast on medium heat for 1-2 minutes. Grind the mixtures in a spice grinder.
  2. To cook meat

    In a pot, add all ingredients for cooking meat and cook for 45 minutes or till the yellow split peas are soft and mushy and till the excess water has evaporated. Let the mixture cool, then pour it into a chopper to smooth it.
  3. To make kababs

    In a large dish, mix kabab mixture, fresh coriander, boiled eggs, beaten egg, chopped onion, chaat masala, and salt. Mix well. Grease hands with oil and make patties of kabab mixture.
  4. To fry kababs

    Beat eggs with salt and red chilli powder. Dip each kabab in the egg wash and then in the bread crumbs. Shallow fry the kababs until golden brown and serve hot.
