Ramadan Recipes: Shirazi Salad

Shirazi salad is a staple of every Iranian meal. It's as simple as can be, but the flavor and texture are spot on. What makes this salad a cut above the rest are the herbs and spices that go into the dressing.

Shirazi Salad

3 Roma tomatoes - small diced
4 small Persian cucumbers - small diced
¼ to ½ cup finely chopped onions
½ green bell pepper - chopped into small pieces
2 to 3 tbsps chopped fresh parsley
2 to 3 tbsps chopped cilantro
2 to 3 tbsps chopped dill
1 tbsp dried mint (or ½ cup chopped fresh mint)
Salt and pepper, to taste
Sumac, to taste
Juice of 2 large limes
3 tbsps extra virgin olive oil

  1. Add the vegetables

    In a large bowl, place the diced tomatoes, cucumbers, onions, and bell peppers.
  2. Add the herbs and spices

    Add fresh herbs, dried mint, a generous pinch of salt and pepper, and sumac.
  3. Drizzle the dressing

    Add lime juice, and a generous drizzle of extra virgin olive oil. Toss well to combine. Cover and chill this salad in the fridge for at least 30 minutes.
