Mushroom Veggie Toast

10 pieces of milk toast (or any kind you like)
1 green bell pepper, finely chopped
1 can corn, washed and drained
2 garlic cloves, minced
250 grams mushrooms, chopped
1 tbsp butter
1 tbsp olive oil
3 tbsp mayonnaise
Salt and black pepper to taste
1 tsp garlic powder
1 tsp oregano
1 cup mozzarella cheese

  1. Cook the Mushrooms

    Heat olive oil and butter in a hot skillet. Once the butter melts, add chopped mushrooms and cook until tender. Set aside and allow it to cool.
  2. Make the Veggie Mix

    In a large bowl, combine chopped green bell pepper, corn, minced garlic, and the cooked mushrooms. Stir in mayonnaise, adjusting to achieve the desired consistency.
  3. Season the Veggie Mix

    Season with salt, pepper, garlic powder, and oregano, mixing well to enhance the flavors.
  4. Toast the Bread

    Brush the bread with olive oil and broil in a preheated oven at 180°C until golden brown. Flip, brush again with olive oil, and toast the other side until evenly crisp.
  5. Top the Toast

    Remove the toasted bread from the oven, but keep it on the baking sheet. Spread a generous layer of the veggie mix, smoothing it out evenly. Sprinkle a heaping amount of mozzarella cheese on top.
  6. Melt the Cheese

    Return the bread under the broiler until the cheese is fully melted and bubbly. Serve warm and enjoy!
