Sambusa, also spelled samosa, is a popular snack in many parts of the world, especially in the Indian subcontinent, Middle East, and Africa. The origin of sambusa is believed to have originated in the Middle East or Central Asia and then spread to other parts of the world. This recipe for Arabic sambusa makes a deliciously crispy appetizer that is perfect for any dinner gathering especially during Ramadan.

Sambusa

2 tablespoons olive oil
1 small onion, finely chopped
1 leek, chopped
1 clove garlic, minced
2 pounds of ground beef
2 teaspoons ground cumin
2 teaspoons ground cardamom
1 teaspoon salt
1 teaspoon pepper
1 tablespoon all-purpose flour
1 tablespoon water, or as needed
1 (14 ounce) package spring roll wrappers
1 quart oil for frying, or as needed

  1. Heat the olive oil & add ingredients

    Heat the olive oil in a large skillet over medium heat. Add chopped onion, leek, and minced garlic to the hot oil and cook until the onion becomes transparent.
  2. Add and Mix

    Add ground beef to the skillet and cook until it's slightly pink and about halfway done. Season the beef mixture with ground cumin, ground cardamom, salt, and pepper. Mix well and continue cooking until the beef is browned and crumbly.
  3. Mix all together

    Remove the skillet from heat. In a small bowl, make a thin paste by mixing together all-purpose flour and water.
  4. Fill the cones with beef

    Take one spring roll wrapper at a time and fold it into a cone shape. Then, fill the cone with the beef mixture, close the top, and seal it with the flour paste.
  5. Repeat and heat

    Repeat the process until all the wrappers or filling is used up. Then, heat the oil in a deep fryer or large saucepan to 365 degrees F (170 degrees C).
  6. Fry until brownish color

    Fry the sambusas, a few at a time, in the hot oil until they turn golden brown.
  7. Remove and Drain

    Finally, remove the sambusas from the oil and drain them on a paper towel-lined plate.
