Chicken Burrito Protein Bowl

¼ cup avocado oil
3 tablespoons lime juice
3 chipotle chilis in adobo sauce finely chopped, plus 1 ½ tablespoon adobo sauce
1 ½ teaspoon garlic powder
¾ teaspoon salt
1 ½ pounds chicken breast cut into strips1 cup long-grain white rice rinsed
1 ½ cups water
¼ teaspoon salt plus more to taste
Zest of 1 lime plus 2 tbsp fresh lime juice
¼ cup chopped fresh cilantro1 head romaine lettuce chopped
1 cup diced tomatoes
1 avocado chopped
1 cup frozen corn thawed
1 15-ounce can black beans rinsed and drained
½ small red onion chopped

  1. Marinating the Chicken

    In a large bowl, stir together oil, lime juice, chopped chilies, adobo sauce, garlic powder, and salt. Add chicken and toss to coat evenly. Cover the bowl and let the chicken marinate in the refrigerator for at least 2 hours or up to overnight.
  2. Cooking the Chicken

    Heat a large pan over medium-high heat. Remove the chicken from the marinade and add it to the pan. Cook, stirring occasionally, until the chicken is cooked through, which should take about 5 minutes. Once cooked, set the chicken aside.
  3. Preparing the Rice

    In a pot of boiling water, add salt and rice. Bring it back to a boil, then reduce the heat, cover the pot, and let it simmer until the water is absorbed and the rice is tender, which usually takes about 15-18 minutes. Once cooked, uncover the pot and fluff the rice with a fork. Then, add lime zest, lime juice, cilantro, and additional salt to taste, mixing everything together.
  4. Assembling the Bowl

    To assemble the protein bowl, start by arranging the cooked rice and lettuce at the bottom of a serving bowl. Next, layer on top the cooked chicken, diced tomatoes, diced avocados, corn, black beans, and red onions.
