Ramadan Recipes: Maqlooba

Maqlooba is a dish commonly made across various Arabic countries like Iraq, Palestine, Jordan, and Syria. It is a layered dish using rice, vegetables, mainly eggplants, and meat or chicken, allowing all the flavors to beautifully melt into each other.

1 medium eggplant

2kgs bone-in chicken pieces
1 small onion cut into wings
1½ teaspoons ground black pepper
1 teaspoon ground cumin
3 cloves
2 green cardamom pods
3 bay leaves
2½ cups short-grain rice
3 teaspoons olive oil
½ teaspoon ground turmeric
½ teaspoon ground cinnamon
¼ teaspoon ground allspice

  1. Prepare the eggplant

    Cut the eggplant into 2cm-thick slices, season well with salt, and let sit for at least half an hour, then press the eggplant with a paper towel until dry, and fry it until browned.
  2. Cook the chicken

    Heat olive oil in a large pot over medium-high heat, place the chicken with the skin side down, add salt, black pepper, ground cumin, cloves, cardamom pods, and bay leaves, then add the onion wings, and 4½ cups of water. Turn down to a simmer, and cook for 20 minutes.
  3. Remove the chicken and set aside

    Drain the chicken and keep the stock, discard the onion and spices, and then add the turmeric, cinnamon, and ground allspice. Mix well and add some water to adjust the total amount of liquid you need to cook the rice.
  4. Start layering

    Place the chicken back in the pot with skin side down, place the eggplant on top, then add the rice, which has been soaked in water for 10 minutes, and pour in 4 cups of the chicken stock and bring to a boil over high heat, then turn it down to low. It will cook for 35-40 minutes, but stir the rice every 10 minutes.
  5. Flip it over

    Place a very large serving dish on top of the pot, then using both hands to invert the pot onto the dish.
