From Chocolate Bar to Chewy Sensation

The original Dubai chocolate bar blew up for its mix of textures: crunchy kataifi, creamy pistachio filling, all coated in chocolate. It sparked copycat recipes, spin-offs, and endless social media recreations.

Now, TikTok has crowned a new favorite: the Dubai chewy cookie.

The trend actually started in South Korea and has been flooding global feeds over the past couple of months. One break-apart video and you’ll get the hype.

So What Exactly Is It?

The dessert was created by South Korean pastry chef Kim Na-ra of Mond Cookie in Gimpo-si.

It’s round, usually dusted in cocoa powder, and served in a paper cup. Inside, you’ll find toasted kataifi, pistachio cream, tahini, and white chocolate for structure.

But here’s the twist: instead of a chocolate shell, the outside is coated in marshmallow. That’s what gives it the soft, stretchy texture that makes it so satisfying to pull apart.

It looks like mochi, but it’s not. It’s marshmallow doing all the heavy lifting.

It’s Already Causing Long Lines

The cookie became a full-blown sensation in South Korea in late 2025, with bakeries selling out fast.

Even Starbucks South Korea jumped in this January with its own “Dubai chewy roll,” limiting how many customers could buy because demand was that intense.

Now, home bakers and dessert creators everywhere are sharing DIY versions — and it’s only gaining momentum.

If the Dubai chocolate bar was about crunch, the chewy cookie is all about stretch. And honestly, it might be the upgrade no one saw coming.
