Egg White Bites with Red Pepper

1 16-ounce carton egg whites
½ cup shredded mozzarella cheese
½ cup whole milk cottage cheese
¼ cup crumbled feta cheese
¼ cup finely diced roasted red pepper
¼ cup finely chopped spinach

    In a blender, combine the egg whites, mozzarella cheese, cottage cheese, and feta cheese. Blend until smooth and bubbly, approximately 30 seconds, ensuring a uniform consistency for the egg white mixture.
  3. Assemble the Egg White Cups:

    Divide the chopped red pepper and spinach evenly into each of the silicone cups. Pour the blended egg white mixture on top, filling each cup close to the brim. Season with salt and black pepper to taste.
  4. Set Up the Baking Process:
