One-Pot Kebabs

2-3 pounds Lean stew beef, such as London Broil (I strongly prefer to my own and cut it, instead of buying pre-cut stew meat)
2 large onions, chopped
1 tablespoon salt
1 teaspoon ground black pepper
1.5 teaspoons ground Allspice
5-6 cardamom pods, smashed OR
1/2 -1 teaspoons ground cardamom
1 cinnamon stick (optional)
1 teaspoon olive oil (optional)
2 garlic cloves, crushed (optional)

  1. Prepare Beef Cubes

    Trim the beef of excess fat and cut it into approximately 1-inch cubes, adjusting the size based on your preference.
  2. Sauté Beef and Onions

    Heat a wide pan, such as a Dutch Oven or a stainless steel sauté pan, over medium-high heat. If needed, add oil. Stir in the beef and onions, ensuring even cooking until the meat is no longer red.
  3. Season and Caramelize

    Add salt and pepper to the beef-onion mixture, cover, and reduce the heat to medium-low. Periodically check and stir every 10 minutes. As the water reduces, stir to evenly brown the beef and onions. Once caramelized, add allspice, cardamom, bay leaf, optional spices, and 0.5 cups of water. Simmer until most of the water evaporates.
  4. Tenderize and Serve

    Continue the cooking process by adding water in 1/4-1/2 cup increments, stirring, covering, and simmering until the beef becomes tender. Adjust salt and pepper to taste. Once done, you'll have moist, tender beef in a flavorful sauce of caramelized onions. Serve warm and enjoy.
